The adjuncts for Cornell's Labor Extension Upstate division recently voted for union representation with the New York State teachers' union. I have taught as an adjunct for going on four years now, and while pay is certainly an issue, I haven't gotten a salary increase in that time, the more important issues are professional and program development.
